Authentic Recipe: Homemade Poğaça (Cheese, Olive or Potato Buns)

Soft, crumbly poğaça are the most popular Turkish bakery buns, found at every breakfast table and tea break. One dough, many fillings.

Makes: about 20 | Prep: 30 min + 45 min rise | Bake: 20 min

Ingredients

For the dough

  • 1 cup warm milk
  • ½ cup oil
  • ½ cup plain yogurt
  • 1 packet (2¼ tsp) instant yeast
  • 1 tbsp sugar
  • 1½ tsp salt
  • 1 egg (white in the dough, yolk for brushing)
  • About 4½ cups flour

Choose a filling

  • Cheese: 1½ cups crumbled white cheese with dill or parsley
  • Olive: 1 cup chopped black olives
  • Potato: 2 boiled, mashed potatoes with a little onion, pul biber and salt
  • Plain: no filling, just sesame or nigella on top

Instructions

  1. Mix the wet ingredients with the yeast, sugar, salt and egg white. Add flour gradually and knead into a very soft dough.
  2. Cover and let rise for 45 minutes.
  3. Divide into walnut-size balls, flatten each, add a spoon of filling and pinch closed. For olive poğaça, knead the olives straight into the dough.
  4. Place seam-side down on a lined tray, brush with egg yolk and sprinkle with seeds.
  5. Bake at 350°F (180°C) for 18–20 minutes until golden.

Tips

  • The dough should be softer than bread dough; that's what makes poğaça tender.
  • Short on time? Warm our ready-made poğaça in the oven for 5 minutes.
