Authentic Recipe: İzmir Boyoz Breakfast

Boyoz is İzmir's flaky, oily breakfast pastry, brought by the city's Sephardic Jewish community. The classic way to eat it: hot boyoz, a hard-boiled egg and a glass of tea.

Serves: 2 | Prep: 5 min | Cook: 15 min

Ingredients

  • 4 boyoz
  • 2 eggs
  • Black pepper and salt
  • Turkish tea, to serve
  • Optional: a few olives and sliced tomatoes

Instructions

  1. Bake the boyoz at 375°F (190°C) for 12–15 minutes until crisp and golden.
  2. Meanwhile, boil the eggs for 9–10 minutes, cool in cold water and peel.
  3. Halve the eggs and season with salt and pepper.
  4. Serve the hot boyoz with the eggs and tea, the İzmir way.

Tips

  • In İzmir boyoz is sold from street carts every morning, always with yumurta (egg).
  • Boyoz is best eaten straight from the oven.
