Authentic Recipe: Ballı Pasta (Layered Honey Cake)

Thin honey-caramel cake layers stacked with a light cream filling. Turkish bakeries call it ballı pasta, and it's a favorite for birthdays and tea time.

Serves: 12 | Prep: 1 hr | Bake: 30 min + overnight chill

Ingredients

For the layers

  • 3 tbsp honey
  • ½ cup sugar
  • 4 tbsp butter
  • 2 eggs
  • 1 tsp baking soda
  • About 2½ cups flour

For the cream

  • 2 cups sour cream
  • 1 cup heavy cream
  • ½ cup powdered sugar

Instructions

  1. Melt the honey, sugar and butter in a pot. Off the heat, whisk in the eggs, then the baking soda.
  2. Stir in flour until you have a soft dough. Divide into 6–8 balls.
  3. Roll each ball thin into an 8-inch circle and bake at 350°F (180°C) for 4–5 minutes until golden.
  4. Whip the sour cream, heavy cream and powdered sugar.
  5. Stack the layers with cream between each one, saving one layer to crumble over the top.
  6. Chill overnight so the layers soften.
