Authentic Recipe: Homemade Istanbul Simit (Sesame Bagel)

Istanbul's iconic street bread: twisted rings dipped in grape molasses and crusted with toasted sesame seeds. Crunchy outside, soft inside.

Makes: 8 simit | Prep: 30 min + 1 hr rise | Bake: 20 min

Ingredients

For the dough

  • 4 cups (500 g) flour
  • 1 packet (2¼ tsp) instant yeast
  • 1 tsp sugar
  • 1½ tsp salt
  • 1¼ cups warm water
  • 2 tbsp oil

For the coating

  • ½ cup grape molasses (pekmez)
  • 1 cup water
  • 1½ cups sesame seeds, lightly toasted

Instructions

  1. Knead the dough ingredients into a firm, smooth dough. Cover and let rise for 1 hour.
  2. Divide into 8 pieces. Roll each piece into two thin ropes, twist them together and join the ends into a ring.
  3. Mix the molasses and water. Dip each ring in it, then press into the sesame seeds on all sides.
  4. Place on a lined tray, let rest 10 minutes, then bake at 425°F (220°C) for 18–20 minutes until deep golden.

Tips

  • Pekmez gives simit its color and slight sweetness; don't skip it.
  • Short on time? Warm our ready-made simit in the oven for 5 minutes and serve with white cheese and tea.
