Authentic Recipe: Künefe (Hot Kadaifi & Cheese Dessert)

Hatay's famous dessert: buttery kadaifi strands around a melted, stretchy cheese center, baked until crisp and soaked in syrup. Served piping hot with pistachios.

Serves: 4 | Prep: 15 min | Cook: 20 min

Ingredients

For the künefe

  • 8 oz (250 g) kadaifi dough
  • 6 tbsp (85 g) butter, melted
  • 8 oz (250 g) unsalted melting cheese (künefe cheese, or fresh mozzarella)

For the syrup and topping

  • 1 cup sugar
  • ¾ cup water
  • A few drops of lemon juice
  • Ground pistachios

Instructions

  1. Make the syrup and let it cool.
  2. Chop the kadaifi into short strands and rub them with the melted butter.
  3. Press half into a small round pan, add the cheese in an even layer and cover with the rest of the kadaifi. Press firmly.
  4. Cook on the stovetop over medium-low heat for 8–10 minutes until golden underneath, then flip onto a plate and slide back in to brown the other side. Or bake at 400°F (200°C) for 20 minutes.
  5. Pour the cold syrup over the hot künefe and sprinkle with pistachios. Serve immediately.

Tips

  • Künefe must be eaten hot, while the cheese still stretches.
  • Short on time? Heat our ready-made künefe in the oven until the cheese bubbles and serve right away.
