Authentic Recipe: Soğuk Baklava (Milk & Cocoa Baklava)

A lighter, newer style of baklava from Turkey's dessert shops: soaked in sweetened milk instead of sugar syrup, served cold and dusted with cocoa.

Serves: 10–12 | Prep: 40 min | Bake: 35 min + overnight chill

Ingredients

For the baklava

  • 1 lb (500 g) phyllo dough, thawed
  • 1½ cups ground pistachios
  • ¾ cup (170 g) butter, melted

For the milk syrup

  • 4 cups milk
  • 1 cup sugar
  • 1 tsp vanilla

To finish

  • Cocoa powder
  • Extra ground pistachios

Instructions

  1. Layer half the buttered phyllo sheets in a pan, add the pistachios, then layer the rest.
  2. Cut into squares and bake at 350°F (180°C) for 30–35 minutes until light golden.
  3. Warm the milk with the sugar and vanilla until the sugar dissolves, then let it cool to lukewarm.
  4. Pour the milk over the baked baklava a little at a time so it soaks in.
  5. Cover and chill overnight. Dust with cocoa and pistachios before serving.

Tips

  • It must be served cold; that's where the name comes from.
  • Short on time? Keep our ready-made soğuk baklava chilled and serve straight from the fridge.
