Authentic Recipe: Kol Böreği (Rolled Börek with Cheese, Spinach or Potato)

Kol böreği means 'arm börek' because the long rolls look like arms. Filled with cheese, spinach or potato and baked until golden.

Serves: 8 | Prep: 30 min | Bake: 35 min

Ingredients

For the börek

  • 3 large round yufka sheets (or 10 phyllo sheets)
  • ½ cup milk
  • ½ cup oil
  • 1 egg (white for the sauce, yolk for the top)
  • Sesame or nigella seeds

Choose a filling

  • Cheese: 2 cups crumbled white cheese with parsley
  • Spinach & cheese: 1 lb spinach sautéed with an onion, mixed with 1 cup white cheese
  • Potato: 3 boiled, mashed potatoes with 1 sautéed onion, pul biber and salt

Instructions

  1. Whisk the milk, oil and egg white.
  2. Lay a yufka sheet flat, brush with the milk mixture and cut it in half (or into thirds for finger-size rolls).
  3. Spread filling along the long edge and roll into a rope.
  4. Coil the ropes in a greased round pan or line them up in a tray.
  5. Brush with egg yolk, sprinkle with seeds and bake at 375°F (190°C) for 30–35 minutes until golden.

Tips

  • Squeeze the spinach very dry so the börek stays crisp.
  • Short on time? Bake our ready-made rolled börek straight from frozen.
