Authentic Recipe: Tavuk Şiş (Chicken Skewers)

Juicy chicken cubes marinated in yogurt, pepper paste and spices, then grilled. Tavuk şiş is on every kebab house menu in Turkey.

Serves: 4 | Prep: 15 min + 2 hr marinating | Cook: 12 min

Ingredients

  • 2 lb boneless chicken thighs or breast, cut into 1½-inch cubes
  • ½ cup plain yogurt
  • 1 tbsp red pepper paste (biber salçası)
  • 1 tbsp tomato paste
  • 3 tbsp olive oil
  • 2 garlic cloves, grated
  • 1 tsp each salt, black pepper and paprika
  • 1 tsp dried thyme
  • Juice of ½ lemon
  • Metal or soaked wooden skewers

Instructions

  1. Mix the yogurt, both pastes, olive oil, garlic, spices and lemon juice in a bowl.
  2. Add the chicken, coat well, cover and marinate in the fridge for at least 2 hours, or overnight.
  3. Thread the chicken onto skewers.
  4. Grill over medium-high heat for 10–12 minutes, turning often, until charred at the edges and cooked through.

Tips

  • Thighs stay juicier than breast on the grill.
  • Serve with bulgur pilaf, grilled peppers and sumac onions.
