Authentic Recipe: Soslu Tavuk Kanat (Turkish-Style Chicken Wings)

Wings marinated in pepper paste, yogurt and spices, then grilled or baked until sticky and charred. A favorite at Turkish grill houses.

Serves: 4 | Prep: 10 min + 1 hr marinating | Cook: 35 min

Ingredients

  • 3 lb chicken wings
  • 2 tbsp red pepper paste
  • 3 tbsp plain yogurt
  • 3 tbsp olive oil
  • 2 garlic cloves, grated
  • 1 tsp each salt, paprika and red pepper flakes
  • ½ tsp black pepper
  • 1 tbsp pomegranate molasses (optional)

Instructions

  1. Mix all the marinade ingredients in a large bowl.
  2. Add the wings, toss well and marinate at least 1 hour in the fridge.
  3. Bake on a lined tray at 425°F (220°C) for 30–35 minutes, turning once, or grill over medium heat for 20–25 minutes.
  4. For extra shine, brush with pomegranate molasses for the last 5 minutes.

Tips

  • Pat the wings dry before marinating for crispier skin.
  • Serve with lavaş, sumac onions and grilled peppers.
