Authentic Recipe: Fırında Patatesli Tavuk (Oven Chicken with Potatoes)

A Sunday-dinner staple in Turkish homes: chicken pieces and potatoes roasted in one tray with pepper paste, garlic and herbs until golden.

Serves: 4–6 | Prep: 15 min | Cook: about 1 hour

Ingredients

  • 3 lb chicken pieces (drumsticks, leg quarters or a whole chicken cut into pieces)
  • 4 potatoes, cut into wedges
  • 1 onion, cut into wedges
  • 2 green peppers, sliced
  • 2 tomatoes, cut into wedges
  • 1 tbsp red pepper paste
  • 1 tbsp tomato paste
  • 4 tbsp olive oil
  • 3 garlic cloves, crushed
  • 1½ tsp salt, 1 tsp black pepper, 1 tsp paprika, 1 tsp dried thyme
  • ½ cup hot water

Instructions

  1. Heat the oven to 400°F (200°C).
  2. Mix the pastes, olive oil, garlic and spices into a sauce.
  3. Toss the chicken, potatoes, onion and peppers with the sauce in a large roasting tray. Tuck the tomatoes in between.
  4. Pour the hot water into the corner of the tray, cover with foil and bake for 30 minutes.
  5. Remove the foil and bake another 25–30 minutes until the chicken is golden and the potatoes are tender.

Tips

  • Chicken is done at 165°F (74°C) in the thickest part.
  • Serve with a shepherd's salad (çoban salatası) and fresh bread.
