Authentic Recipe: Peynirli Menemen (Turkish Scrambled Eggs with Cheese)

Menemen is soft-scrambled eggs cooked with peppers and tomatoes. Crumbling in tulum cheese at the end adds a sharp, salty richness.

Serves: 2 | Prep: 5 min | Cook: 15 min

Ingredients

  • 2 tbsp butter or olive oil
  • 2 green peppers, chopped
  • 3 ripe tomatoes, grated or finely chopped
  • 4 eggs
  • ½ cup crumbled tulum cheese
  • Salt (go easy, the cheese is salty)
  • Red pepper flakes

Instructions

  1. Heat the butter in a pan and cook the peppers until soft.
  2. Add the tomatoes and cook until most of the liquid has evaporated.
  3. Crack in the eggs and stir gently, just until barely set.
  4. Sprinkle over the tulum cheese and pepper flakes, take it off the heat and serve in the pan.

Tips

  • Take it off the heat while the eggs still look slightly wet; they keep cooking.
  • Serve with crusty bread for dipping.
