Authentic Recipe: Zahterli Pide (Za'atar Flatbread)

In Hatay and southern Turkey, zahter (za'atar) mixed with olive oil is spread on dough and baked, much like the Levantine man'oushe. A favorite breakfast bread.

Makes: 4 flatbreads | Prep: 15 min + 1 hr rise | Bake: 10 min

Ingredients

For the dough

  • 3 cups (375 g) flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 cup warm water

For the topping

  • 4 tbsp za'atar
  • 6 tbsp olive oil
  • Optional: crumbled white cheese, sliced tomatoes

Instructions

  1. Mix the flour, yeast, sugar and salt, then add the oil and warm water and knead into a soft dough. Cover and let rise for 1 hour.
  2. Heat the oven to 450°F (230°C) with a tray inside.
  3. Mix the za'atar with the olive oil into a loose paste.
  4. Divide the dough into 4, roll each into a thin round and press dimples into it with your fingertips.
  5. Spread the za'atar oil over the dough and bake 8–10 minutes until golden at the edges.

Tips

  • Add white cheese for a 'peynirli zahter' version.
  • Serve with tomatoes, cucumbers, olives and tea.
