Authentic Recipe: Humus (Chickpea & Tahini Dip)

Smooth, creamy hummus is eaten all over southern Turkey, from Adana to Hatay, usually warm with butter and pul biber on top.

Serves: 4–6 | Prep: 10 min | Cook: None with canned chickpeas

Ingredients

  • 2 cans (15 oz) chickpeas, drained (save the liquid)
  • ⅓ cup tahini
  • Juice of 1 lemon
  • 1 garlic clove
  • ½ tsp cumin
  • 1 tsp salt
  • 3–5 tbsp cold water or chickpea liquid
  • To serve: olive oil or melted butter, pul biber, parsley

Instructions

  1. Blend the tahini, lemon juice, garlic and 2 tbsp cold water until pale and creamy.
  2. Add the chickpeas, cumin and salt and blend until very smooth, adding more water a spoon at a time.
  3. Taste and adjust lemon and salt.
  4. Spread on a plate, make a swirl with the back of a spoon and top with olive oil or warm butter, pul biber and parsley.

Tips

  • For extra-smooth hummus, peel the chickpeas or warm them before blending.
  • Southern-Turkey style: top with sizzling butter and pastırma.
