Authentic Recipe: Kuzu Kavurma Dürüm (Quick Lamb Sauté Wraps)

Paper-thin lamb slices sautéed in minutes with onions, peppers and Turkish spices, then wrapped in lavash — a fast, street-style dürüm.

Serves: 4 | Prep: 10 min | Cook: 10 min

Ingredients

  • 1 lb lamb rolls, slightly thawed
  • 2 tbsp butter or olive oil
  • 1 onion, thinly sliced
  • 2 green peppers (sivri biber), sliced
  • 1 tomato, diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp pul biber
  • ½ tsp ground cumin
  • 4 lavash wraps
  • Sumac onions and parsley, to serve

Instructions

  1. Heat the butter in a large skillet over high heat.
  2. Add the onion and peppers and cook for 3 minutes.
  3. Add the lamb slices, spreading them out, and stir-fry for 2–3 minutes until just cooked.
  4. Add the tomato and spices and cook 1–2 minutes more.
  5. Spoon into warm lavash with sumac onions and parsley, roll up and serve.

Tips

  • Great for hot pot and shabu-shabu: dip slices in simmering broth for 20–30 seconds.
  • Slice and cook while still partly frozen to keep the rolls neat.
