Authentic Recipe: Çörek Otlu Poğaça (Soft Buns with Nigella Seeds)

Soft, buttery Turkish breakfast buns, brushed with egg and topped with nigella and sesame seeds. Perfect with tea and white cheese.

Makes: 16 buns | Prep: 25 min + 1 hr rise | Bake: 20 min

Ingredients

For the dough

  • 1 cup warm milk
  • ½ cup vegetable oil
  • ½ cup plain yogurt
  • 1 packet (2¼ tsp) instant yeast
  • 1 tbsp sugar
  • 1½ tsp salt
  • 1 egg white (save the yolk)
  • About 4½ cups flour

For the filling and topping

  • 1 cup crumbled white cheese with parsley (optional)
  • 1 egg yolk
  • 1 tbsp nigella seeds (çörek otu)
  • 1 tbsp sesame seeds

Instructions

  1. Mix the milk, oil, yogurt, yeast, sugar, salt and egg white.
  2. Add flour gradually and knead into a very soft dough. Cover and let rise 1 hour.
  3. Divide into 16 balls. If filling, flatten each, add a spoon of cheese and pinch closed.
  4. Place on a lined tray, brush with egg yolk and sprinkle with nigella and sesame seeds.
  5. Bake at 350°F (180°C) for 18–20 minutes until golden.

Tips

  • The dough should be softer than bread dough; that's what makes poğaça fluffy.
  • Freeze baked poğaça and warm them in the oven for quick breakfasts.
