Authentic Recipe: Islak Burger (Istanbul Wet Burger)

A Taksim Square legend: soft buns soaked in a garlicky tomato sauce, then steamed until meltingly tender. Late-night Istanbul in one bite.

Makes: 6 burgers | Prep: 10 min | Cook: 25 min

Ingredients

For the burgers

  • 6 patties
  • 6 soft hamburger buns

For the sauce

  • 3 tbsp butter
  • 2 tbsp tomato paste
  • 3 garlic cloves, crushed
  • 1 cup water
  • ½ tsp salt
  • Pinch of cumin and red pepper flakes

Instructions

  1. Cook the patties in a skillet 3–4 minutes per side until done.
  2. For the sauce, melt the butter, stir in the garlic and tomato paste for a minute, then add the water, salt and spices. Simmer 5 minutes.
  3. Dip both cut sides of each bun in the sauce, put a patty inside and spoon a little more sauce on top.
  4. Pack the burgers tightly in a deep dish, cover with foil or a lid.
  5. Steam them in a 300°F (150°C) oven, or over a pot of simmering water, for about 15 minutes until soft.

Tips

  • They're meant to be soft and saucy, not crispy, so don't skip the steaming.
  • Serve with pickles and a cold ayran.
