Authentic Recipe: Tahin Pekmez (Tahini & Molasses Spread)

A traditional Anatolian winter breakfast: tahini and fruit molasses swirled together and scooped up with bread. Sweet, nutty and full of energy.

Serves: 2–4 | Prep: 2 min | Cook: None

Ingredients

  • 3 tbsp tahini
  • 2–3 tbsp pekmez (grape, carob or mulberry molasses)
  • Fresh bread, simit or toast
  • Optional: a pinch of cinnamon or crushed walnuts

Instructions

  1. Stir the tahini well in the jar first, since the oil separates.
  2. Spoon the tahini onto a small plate.
  3. Pour the molasses over it, about 1 part molasses to 1 part tahini (adjust to taste).
  4. Swirl lightly with a spoon and scoop up with bread.

Tips

  • Grape pekmez is the classic; carob is less sweet and mulberry is fruity.
  • Also delicious drizzled over yogurt or pancakes, or stirred into warm milk.
