Authentic Recipe: Kavurmalı Yumurta (Eggs with Beef Kavurma)

Kavurma is beef slow-cooked in its own fat, a winter staple in Anatolia. The best-loved way to eat it is warmed in a pan with eggs cracked on top.

Serves: 2 | Prep: 2 min | Cook: 8 min

Ingredients

  • ½ can beef kavurma (about 7 oz)
  • 3–4 eggs
  • 1 tsp butter (optional)
  • Black pepper and pul biber
  • Fresh bread, to serve

Instructions

  1. Warm the kavurma in a small pan over medium heat until the fat melts and it sizzles, about 3 minutes.
  2. Spread it out evenly and make little wells.
  3. Crack the eggs into the wells.
  4. Cover and cook until the whites are set and the yolks still runny. Season with pepper and pul biber, and serve in the pan.

Tips

  • Kavurma is already seasoned, so taste before adding salt.
  • Also great stirred into rice pilaf or folded into pide.
