Authentic Recipe: Homemade Gözleme (Stuffed Flatbread)

Gözleme is the village flatbread rolled paper-thin, filled with cheese, spinach or potatoes and cooked on a griddle (sac). You'll find women making it by hand at markets all over Turkey.

Makes: 6 gözleme | Prep: 40 min | Cook: 20 min

Ingredients

For the dough

  • 3 cups (375 g) flour
  • 1 tsp salt
  • 1 tsp instant yeast (optional, for a softer dough)
  • 1 cup warm water
  • 2 tbsp oil

Choose a filling

  • Cheese: 1½ cups crumbled white cheese with chopped parsley
  • Spinach & cheese: 4 cups chopped spinach sautéed with 1 onion, mixed with 1 cup white cheese
  • Potato: 3 boiled, mashed potatoes with 1 sautéed onion, pul biber and salt

For cooking

  • 3 tbsp melted butter

Instructions

  1. Mix the flour, salt and yeast, add the water and oil and knead into a soft dough. Divide into 6 balls and rest 30 minutes.
  2. Roll each ball very thin into a large oval or circle.
  3. Spread filling over one half, fold the other half over and press the edges to seal.
  4. Cook on a dry, hot griddle or large skillet for 2–3 minutes per side until golden spots appear.
  5. Brush with melted butter as soon as it comes off the heat, cut into pieces and serve.

Tips

  • Serve with ayran; it's the classic pairing.
