Authentic Recipe: Homemade Açma (Soft Istanbul Rolls)

Açma is simit's softer, buttery cousin: rich, fluffy rings eaten for breakfast all over Istanbul.

Makes: 10 açma | Prep: 30 min + 1½ hr rise | Bake: 20 min

Ingredients

  • 1 cup warm milk
  • ½ cup oil
  • ½ cup plain yogurt
  • 1 packet (2¼ tsp) instant yeast
  • 2 tbsp sugar
  • 1½ tsp salt
  • 1 egg (white in the dough, yolk for brushing)
  • About 4½ cups flour
  • 2 tbsp softened butter
  • Sesame or nigella seeds, for topping

Instructions

  1. Mix the milk, oil, yogurt, yeast, sugar, salt and egg white. Add flour and knead into a very soft dough. Let rise 1 hour.
  2. Divide into 10 pieces. Roll each into a thin rectangle, spread with a little butter and roll up into a rope.
  3. Twist the rope and join the ends into a ring.
  4. Place on a tray, brush with egg yolk, sprinkle with seeds and let rise 30 minutes.
  5. Bake at 350°F (180°C) for 18–20 minutes until golden.

Tips

  • Fill with olive paste or chocolate for variety.
  • Short on time? Warm our ready-made açma for a few minutes in the oven.
