Authentic Recipe: Muhlama (Kuymak) with Kaşar Cheese

From the Black Sea mountains: cornmeal cooked in butter, with stretchy melted cheese stirred through until it pulls in long strings. Eaten straight from the pan with bread.

Serves: 2–3 | Prep: 5 min | Cook: 15 min

Ingredients

  • 3 tbsp butter
  • 3 tbsp fine cornmeal
  • 1½ cups water
  • 1½ cups grated kashkaval (kaşar) cheese
  • Pinch of salt
  • Fresh bread, to serve

Instructions

  1. Melt the butter in a small pan and toast the cornmeal in it for 2–3 minutes, stirring.
  2. Slowly pour in the water while stirring, add the salt, and cook until thick, about 5 minutes.
  3. Add the cheese and stir gently until it melts and the butter starts to separate around the edges.
  4. Serve hot in the pan and dip with bread.

Tips

  • It's ready when the cheese stretches in long strings and golden butter pools on top.
  • Usually eaten for breakfast with tea.
