Authentic Recipe: İskender Kebab

Bursa's most famous dish: thin slices of döner over pide cubes, covered with tomato sauce, sizzling browned butter and a spoon of yogurt.

Serves: 4 | Prep: 10 min | Cook: 15 min

Ingredients

  • 1½ lb döner meat, thinly shaved
  • 2 pide breads, cut into cubes
  • 2 tbsp tomato paste
  • 1 cup water
  • Salt
  • 4 tbsp butter
  • 1½ cups thick plain yogurt
  • Grilled peppers and tomatoes, to serve

Instructions

  1. Toast the pide cubes lightly in a pan or oven and arrange them on 4 plates.
  2. Heat the döner slices in a skillet until hot and crisp at the edges, then lay them over the bread.
  3. For the sauce, cook the tomato paste in a little butter for a minute, add the water and salt, and simmer 5 minutes.
  4. Spoon the tomato sauce over the meat.
  5. Melt the butter until it sizzles and turns golden, then pour it over the top at the table.
  6. Serve with a big spoon of yogurt and grilled peppers.

Tips

  • The butter should be hot enough to sizzle when it hits the plate.
  • A glass of ayran or şıra is the traditional drink.
