Authentic Recipe: Kısır (Bulgur Salad with Pomegranate Molasses)

Kısır is the star of Turkish 'gün' gatherings: fine bulgur with pepper paste, herbs and pomegranate molasses, served on lettuce leaves.

Serves: 6 | Prep: 20 min + 20 min soak | Cook: None

Ingredients

  • 1½ cups fine bulgur
  • 1¼ cups boiling water
  • 1 tbsp red pepper paste
  • 1 tbsp tomato paste
  • 4 tbsp olive oil
  • 3 tbsp pomegranate molasses
  • Juice of 1 lemon
  • 4 green onions, chopped
  • 1 bunch parsley, chopped
  • A few mint leaves, chopped
  • 1 tsp salt, 1 tsp cumin, pul biber to taste
  • Lettuce leaves, to serve

Instructions

  1. Pour the boiling water over the bulgur, cover and let it sit 20 minutes until soft.
  2. Knead the pepper paste and tomato paste into the warm bulgur with your hands until evenly red.
  3. Add the olive oil, pomegranate molasses, lemon juice, salt and spices and mix well.
  4. Once cool, fold in the green onions, parsley and mint.
  5. Serve on lettuce leaves.

Tips

  • Kneading the pastes into warm bulgur gives kısır its color and flavor.
  • It tastes even better after an hour in the fridge.
