Authentic Recipe: Kıymalı Kol Böreği (Rolled Ground Beef Börek)

Long rolls of yufka filled with spiced ground beef and onions, coiled into a pan and baked until crisp. A Turkish family favorite for weekend breakfasts.

Serves: 8 | Prep: 30 min | Bake: 35 min

Ingredients

For the filling

  • 1 lb ground beef
  • 2 onions, finely chopped
  • 2 tbsp oil
  • 1 tsp each salt, black pepper and pul biber
  • ½ bunch parsley, chopped

For the börek

  • 3 large round yufka sheets (or 10 phyllo sheets)
  • ½ cup milk
  • ½ cup oil
  • 1 egg (white for the sauce, yolk for the top)
  • Sesame or nigella seeds

Instructions

  1. Cook the onions in the oil until soft, add the beef and cook until browned. Season, stir in the parsley and let cool.
  2. Whisk the milk, oil and egg white.
  3. Lay a yufka sheet flat, brush with the milk mixture, and cut it in half.
  4. Spread filling along the long edge of each half and roll into a long rope.
  5. Coil the ropes in a greased round pan, or lay them side by side in a tray.
  6. Brush with egg yolk, sprinkle with seeds and bake at 375°F (190°C) for 30–35 minutes.

Tips

  • Let it rest 10 minutes before cutting so the layers set.
  • Short on time? Bake our ready-made beef kol böreği straight from frozen.
