Authentic Recipe: Paçanga Böreği (Pastırma & Cheese Rolls)

A classic Ottoman meze from the old meyhanes of Istanbul: crisp yufka rolls filled with pastırma, kaşar cheese, peppers and tomato.

Makes: about 12 | Prep: 20 min | Cook: 10 min

Ingredients

  • 6 phyllo or yufka sheets, cut into halves
  • 10–12 slices pastırma, cut into strips
  • 1½ cups grated kaşar or mozzarella
  • 1 green pepper, finely chopped
  • 1 tomato, seeded and diced
  • Oil for frying

Instructions

  1. Mix the cheese, pepper and tomato.
  2. Lay a strip of pastırma along the wide edge of each sheet and top with a spoon of the cheese mix.
  3. Fold in the sides and roll up tightly. Seal the end with a dab of water.
  4. Fry in hot oil, turning, until golden all over. Drain on paper towels and serve hot.

Tips

  • Serve with a crisp salad as a starter.
  • Short on time? Fry or bake our ready-made pastırma & mozzarella rolls straight from the freezer.
