Authentic Recipe: Homemade Su Böreği (Water Börek)

The queen of Turkish börek: sheets of fresh dough boiled briefly, then layered with butter and cheese and baked until golden on top and soft inside. A special-occasion bake in every Turkish home.

Serves: 8–10 | Prep: 1 hr 15 min | Bake: 40 min

Ingredients

For the dough

  • 4 eggs
  • ½ tsp salt
  • About 3 cups (375 g) flour

For the filling and layering

  • 2 cups crumbled white cheese (beyaz peynir)
  • 1 cup grated kaşar or mozzarella
  • ½ bunch parsley, chopped
  • ¾ cup (170 g) butter, melted, plus 2 tbsp oil

Instructions

  1. Knead the eggs, salt and flour into a stiff dough. Divide into 8 balls, cover and rest 30 minutes.
  2. Roll each ball into a very thin sheet the size of your baking pan.
  3. Bring a wide pot of salted water to a boil and set a bowl of cold water beside it.
  4. Keep the first sheet unboiled for the bottom layer. Boil each other sheet for about 30 seconds, dip it in the cold water, drain and lay it in the buttered pan, brushing with butter each time.
  5. After half the sheets, spread the cheese and parsley, then continue layering. Finish with the last unboiled sheet on top and brush with butter.
  6. Bake at 375°F (190°C) for 35–40 minutes until golden. Rest 15 minutes before slicing.

Tips

  • Mix a little oil into the butter so it doesn't burn.
  • Short on time? Our ready-made su böreği only needs reheating in the oven until crisp on top.
