Authentic Recipe: Kayseri Mantı with Garlic Yogurt & Chili Butter

Tiny meat-filled Turkish dumplings, served under garlicky yogurt and drizzled with sizzling pepper butter. Kayseri cooks say a proper mantı is small enough to fit 40 on a spoon.

Serves: 4 | Prep: 10 min | Cook: 15 min

Ingredients

  • 1 pack mantı (12 oz)
  • 1½ cups plain yogurt, at room temperature
  • 2 garlic cloves, grated
  • 3 tbsp butter
  • 1 tbsp tomato paste
  • 1 tsp pul biber
  • Dried mint and sumac, to finish

Instructions

  1. Mix the yogurt with the garlic and a pinch of salt.
  2. Boil the mantı in salted water according to the package, usually 8–12 minutes, until tender. Drain, saving a little cooking water.
  3. Melt the butter, stir in the tomato paste and pul biber and let it sizzle for a minute.
  4. Put the mantı on plates, loosen with a spoon of cooking water, then top with the garlic yogurt.
  5. Pour the hot butter over the top and finish with mint and sumac.

Tips

  • Room-temperature yogurt keeps the dish warm.
  • Some families also bake the boiled mantı in the oven for a few minutes before saucing.
