Authentic Recipe: Sigara Böreği (Cheese Rolls)

Crispy, cigar-shaped rolls of yufka filled with white cheese and parsley, fried until golden. A must-have at Turkish breakfasts and tea time.

Makes: about 20 rolls | Prep: 20 min | Cook: 10 min

Ingredients

  • 1 pack triangle phyllo (yufka) sheets
  • 1½ cups crumbled white cheese (beyaz peynir)
  • ½ bunch parsley, finely chopped
  • 1 egg (optional, for the filling)
  • A little water, to seal
  • Oil for frying

Instructions

  1. Mash the cheese with the parsley (and the egg, if using).
  2. Lay a triangle sheet with the wide side toward you and place a finger-length line of filling along the wide edge.
  3. Fold the sides in and roll tightly toward the point. Dab the tip with water to seal.
  4. Fry in hot oil a few at a time, turning, until golden all over. Drain on paper towels.

Tips

  • Keep the sheets you're not using under a damp towel so they don't dry out.
  • Brush with oil and bake at 400°F (200°C) for 15–20 minutes for a lighter version.
