Authentic Recipe: Pastırmalı Yumurta (Eggs with Pastırma)

A Kayseri breakfast classic: pastırma, the spiced cured beef, warmed in butter with eggs cooked right over it.

Serves: 2 | Prep: 2 min | Cook: 6 min

Ingredients

  • 8–10 thin slices pastırma
  • 1 tbsp butter
  • 3–4 eggs
  • Black pepper and red pepper flakes

Instructions

  1. Melt the butter in a small pan over medium-low heat.
  2. Lay the pastırma slices in the pan and warm for about 1 minute, just until they curl. Don't let them crisp.
  3. Crack the eggs over the pastırma.
  4. Cover and cook until the whites set and the yolks are still runny. Season with pepper and serve.

Tips

  • Pastırma is already salty, so skip the salt.
  • Delicious with bread, tomatoes and Turkish tea.
