Kol böreği means 'arm börek' because the long rolls look like arms. Filled with cheese, spinach or potato and baked until golden.

For the börek

Choose a filling

Cheese: 2 cups crumbled white cheese with parsley
Spinach & cheese: 1 lb spinach sautéed with an onion, mixed with 1 cup white cheese
Potato: 3 boiled, mashed potatoes with 1 sautéed onion, pul biber and salt

Whisk the milk, oil and egg white.
Lay a yufka sheet flat, brush with the milk mixture and cut it in half (or into thirds for finger-size rolls).
Spread filling along the long edge and roll into a rope.
Coil the ropes in a greased round pan or line them up in a tray.
Brush with egg yolk, sprinkle with seeds and bake at 375°F (190°C) for 30–35 minutes until golden.
